Indian style Chick Peas with Indian style cheese 🧀 I had these dish before at Indian cousins 👨🏽‍🍳but never made at home. I used canned chickpeas. Stir fried onion, garlic, ginger, green chili ( optional/ only if you want spicy hot)for 5 minutes on a Then added ground cumin, salt, turmeric, paprika. Fried for few more minutes. Add fresh cut tomato or canned crushed tomatoes. Fried the tomatoes until they become almost liquid. Added the canned chick peas. Cooked the mix for another 5 minutes. Add the cheese cubes and spinach. Cooked another 5 minutes.

Tostada de pollo poblano para la cena de hoy👌🏼

➰En un sartén con 1/2 cdta de ghee, suavice un poco de ajo y cebolla en lajas.

If you love spice, you will LOVE this. My mouth was on fire 🔥 and my nose was drippin’ from the spicy kick (disclaimer: I’m a horrible Mexican when it comes to the ability to eat spicy foods so take what I say about this dish with a grain of salt 😝lol)

Spicy Chicken and Cauliflower
Total Macros: 24 C, 11 F, 39 P
.
Ingredients
▪️2 bags of Foster Farms Chicken Bites (swipe left to see product)
▪️2 cups cauliflower
▪️½ roma tomato
▪️2 slices of Kraft Combo Pack Pepper Jack and Sharp Cheddar Cheese
▪️2 tbsp Kikkoman Stir-Fry Sauce
▪️Cilantro (because everything is so much better with cilantro)

Set oven to 350. Cut cauliflower to desired size and place in ziplock bag. Add in stir-fry sauce, your preferred seasoning, and cilantro in bag and shake it so that the sauce evenly coats the cauliflower. Set on a pan in the oven for 20-25 minutes. Once cauliflower is to your desired doneness, place on a plate. Add chicken (just warm up these bags for 45 seconds!) and diced tomato. Finish off with slices of cheese on the top (Tip! Melt cheese by putting it into the microwave on low heat for 15 seconds)

Quick meals! Trader Joe’s makes meals easy! Shiitake mushrooms, frozen ginger cubes, pre-cut sweet potato ribbons, sprouted tofu and wild shrimp with light coconut milk and curry paste. That’s it ! This meal (4 meals) took me about 7 mins to make including preparation time.

I absolutely love vegetable rolls and sushi! I would say I have sushi two or three times a week, that being said I wanted to find a healthier alternative for eating sushi. A perfect substitution for seaweed and rice is to have cucumber instead. I started ordering my vegetable and sushi rolls wrapped in cucumber, it taste really good and has an extra crunch to it! The next time you order sushi 🍣 swap the seaweed and rice for cucumber 🥒!

Look at all of these gorgeous veggies! 😍No filter necessary, real food is just naturally beautiful.🤗 I made this soup before I made my turkey broth (post up soon) so I bought an organic veggie broth. I like to use my own, but used up all in the freezer during my recent encounter with food poisoning. Which has actually lead me down my current journey of healing my gut. I will be sharing the recipe I used these veggies for in a blog post over the weekend. Today was "fridge pesto" day. This was made with baby kale, walnuts, EVOO, garlic, lemon juice, nutritional yeast, little dried basil, pepper, and salt. The pasta is a bean and lentil based pasta. -

I don't really measure because I taste and adjust as I go, this is a pretty flexible fool proof dish. You can sub the nuts for seeds and the greens for whatever greens you have on hand. -

Taco Thursday is the new Taco Tuesday.
Let’s be honest...tacos any day really.
These were a batch for the books. Mashed yam base, sautéed kale, roasted cauliflower and thinly sliced cabbage topped with a vegan chipotle sour cream and pico.
I’d feel bad if I left you with just that and not the recipe...so here ya go.
Chipotle Sour Cream:
1 pack soft/medium tofu
2 cloves of garlic
1/4 cup white onion
4 tbsp Apple cider vinegar
1/4 cup nutritional yeast
1 (2 if your a spice addict like moi) adobo peppers
- Blend all together for 30-49 seconds
Yams: chop and boil until soft before mashing with chilli seasoning, pepper and a dash of salt to taste.
Cauliflower: toss in coconut oil and season with nutritional yeast, lime juice cayenne and pepper.
Sauté kale with a splash of water until wilted.
Pico: tomato, onion, garlic, cilantro, lime juice, pepper, dash of cumin.
Stack all on top of a corn tostada!
Easy-peasy. Delicious dinner at your finger tips mi amigos. Enjoy!

Basil & white bean hummus 🍃 I like having fresh, good things to snack on, and homemade hummus is always a great option 👌🏻I’ve noticed that if I surround myself with good things, it’s a lot easier to make the right choices 👍🏻 If I don’t want my family (or me) eating “junk food”, there shouldn’t be any at my house, that’s the end of a battle I don’t need 😉 Look for Basil Hummus recipe on my FB page 📝

Now I’m not the type of person to eat something just because it’s healthy, it also has to pack a punch in flavour- And this salad ticks both those boxes! Best of all, you can pick up a pack of smoked rainbow trout fillets from any large grocery store. -

I finely chop fennel, cucumbers 🥒 cut up cooked corn from the cob, add chopped lettuce. Add a good dash of olive oil and balsamic vinegar, salt and pepper. Toss then add your sliced fillets and a squeeze of 🍋. 👌👌 -
