Zucchini and Tomato Skillet 🍅

Ingredients:
1 clove garlic, minced (1 Condiment)
1 tsp olive oil (1 Healthy Fat)
1/2 packet splenda - optional (1/2 Condiment)
1/2 teaspoon salt (2 Condiments)
1/2 tsp dried basil (1/2 Condiment)
1 1/2 tsp grated reduced fat grated parmesan cheese, divided (1/2 Condiment)
Dash of pepper
3 cups zucchini, unpeeled, sliced 1/2-inch thick (6 greens)
1 1/2 cups tomatoes, peeled and diced or it can be canned with less than 5 g of carbs per 1/2 cup (3 Greens)
Directions:
Cook garlic in oil until until garlic is brown. Add sugar, salt, pepper, basil, and zucchini. Saute for 5 minutes, stirring occasionally. Add tomatoes and cook for about 1 minute or until heated thoroughly. Divide into 1 1/2 cup servings. Sprinkle with 1/2 tsp parmesan cheese.
Provides:
3 servings with all your greens (1 1/2 cups), 1.16 condiments and 1/3 healthy fat per serving.

Chicken Fajita Salad
INGREDIENTS:
Pam spray
1 lb raw boneless skinless chicken breast
1 medium red bell pepper, thinly sliced
1 medium yellow bell pepper, thinly sliced
¼ teaspoon salt
½ teaspoon chili powder
½ teaspoon cumin
¼ teaspoon garlic powder
2 teaspoons olive or canola oil
2 tablespoons lime juice
¼ teaspoon chili flakes
3 cups chopped romaine lettuce
1.5 oz sliced avocado
PREPARATION:
Heat pam in a pan over medium-high heat. Cook the chicken, bell peppers, onion, salt, chili powder, cumin, and garlic powder for five minutes, stirring constantly. Flip the chicken, and cook for another five minutes, until chicken is cooked and vegetables are slightly soft. Remove from heat and slice the chicken into strips.
In a small bowl, combine the olive oil, lime juice,splenda, chili, and salt, stirring until evenly mixed.
In a large bowl, toss the romaine lettuce with the chicken, peppers & onions, avocado, and dressing. Serve!
Serves 2
Per Serving: 1 leaner, 1 healthy fat, and ~3 condiments

Lemon Oregano Spaghetti Squash
1. 1 large spaghetti squash (approximately 2 pounds) – use 5 cups cooked squash
2. 4 boneless, skinless chicken thighs, pan-seared and diced – total weight 28 ounces
3. 10 sprays olive oil spray
4. 1 cup frozen kale
5. 1 tablespoon lemon zest
6. ¼ cup lemon juice
7. 1/2 tsp salt
8. 1 tsp oregano
9. 1 tsp crushed red pepper flakes Instructions:
Puncture spaghetti squash rind about 20 times to allow steam to vent while cooking.
Place spaghetti squash on a microwave-safe plate and heat for 8 minutes in microwave
Check for doneness by pressing lightly on spaghetti squash rind. Rind should yield gently to pressure. Heat for an additional 2-4 minutes if spaghetti squash is still hard. Allow spaghetti squash to rest for a few minutes until cool enough to handle.
Slice spaghetti squash lengthwise and scoop out seeds with a large spoon. Use a fork to scrape out spaghetti squash flesh from each half and set "spaghetti" aside.
Add 2 tbs olive oil to a large sauté pan over medium heat. Add spaghetti squash, kale, lemon juice, lemon zest, spices, and diced chicken to pan.
Cook for 10 minutes, stirring occasionally.
Remove from heat and serve immediately.
Makes 4 servings

Lasagna Soup 👇🏼 Makes 4 servings
Per serving
½ Lean protein
3 Greens
3 condiments
1 fat serving Ingredients:
1/2 cup leeks, diced
1 cup zucchinis, diced
5 teaspoons of tomato paste
2 cups no sugar added marinara sauce or no sugar added canned tomato sauce (for fewer calories)
2 cups part-skim mozzarella cheese
4 ounces shirataki noodles or 1 cup cooked spaghetti squash
4 cups of water
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 tsp black pepper
4 teaspoons oil
Directions:
In a large pot, heat oil, add diced leeks and all of the spices.
Saute until Leeks are translucent. Then add tomato paste and stir into leeks.
Add marinara sauce, water and zucchini. Cook on medium heat for 30 minutes, covered.
Then add "noodles" and cook until lasagna is soft.
Ladle soup into oven safe bowls and top with mozzarella cheese.
Place in oven on broil until the cheese melts. Serve immediately.
