Recipe for this sauce 🌿🍅

INGREDIENTS: 1 medium onion finely chopped, 1 28oz. can crushed tomatoes, 1 pint sliced grape or cherry tomatoes, 1 teaspoon salt, 1/2 teaspoon pepper, 2 teaspoons each dried basil and oregano, 4 cloves garlic minced, fresh basil for garnish. 🌿🍅

DIRECTIONS:
In a small amount of olive oil, saute onion and garlic gently until turning translucent. Add tomatoes and cook additional 5 minutes. Add remaining ingredients and cook gently for 10 to 15 minutes🌱🍅

Healthy #plantbased dinner. This is a good use of larger #pattypan #squash. Cut the tops off and use a spoon to remove seeds and some flesh to make a bowl. Season it with salt, pepper and what ever spice you will use in the filling. I went Middle Eastern and used zaatar. Roast them until tender. I picked up cooked #lentils @traderjoes and cooked some #quinoa in one part water, one part carrot juice. Sautéd onion, carrots, celery and garlic. Added the lentil and quinoa. Stirred it up. Added salt , zaatar, golden raisins and a squeeze of lemon. Shoved it into the squash and baked it for about 25 minutes. I taught myself to cook as a vegetarian in my late teens. At that time, there wasn’t really such a thing as North American plant-based cuisine the way there is now. Instead, I turned to ingredients and techniques from culinary traditions that had been flavouring legumes and vegetables for millennia—from Asia, India, the Middle East…basically, most of the world. .
Although tofu and soy sauce are staples in my fridge and I’m pretty sure I’m 60 percent hummus by volume, my first true culinary love was Indian food. In my tiny apartment kitchen with banged-up cheap pots, I seasoned lentils with cumin, coriander, and turmeric, added yogurt to garlicky spinach, stewed chickpeas with coconut milk, and braised cabbage with mustard seeds. I started countless pots of food with that heady formula of onions, garlic, spices, and tomatoes. I couldn’t believe that it was so easy to make intense, complex flavours with so few ingredients and in so little time.
Then, as now, I didn’t really follow recipes, preferring to read over a variety of blogs and cookbooks, and play around based on what I had and what I liked. In doing this I made a lot of mistakes and ended up with some seriously mediocre meals, but it’s how I learned to be a creative, confident home cook. My cooking skills and repertoire have changed enormously since those early days, but one thing is the same: I continue to be in awe of the art of creating tantalizing food with humble ingredients.

Made this coconut curry with whatever I had left in my fridge and freezer. Brocoli (with stem), yellow and green zucchini, frozen mixed veggies (carrots, peas, green beans and corn). Cooked for a bit it water, then added red lentils, a can of coconut milk, and a mixture of curry, turmeric, garlic, onion powder plus ground pepper. Added a bit more water also and let simmer for 10 Minutes. Turned out perfect 👌🏼
Also I’ve started cooking my brown rice “pasta” style- aka boiling in excess water then draining it off when cooked. This reduced arsenic levels, especially since I’m not sure where this rice was grown. Check out @nutrition_facts_org for more information on arsenic in rice.

Cold noodle salad for hot days ☀️
Brown rice vermicelli noodles cooked then mixed with raw carrots, peppers, cucumbers and a sauce of Hoisin mixed with water and garlic. Topped with crispy extra firm tofu, cilantro and green onion. Took the leftovers to the park for a picnic 😋
