Need a delicious healthy meal that takes less than 5 minutes? Got you covered!! Tip: prep your chicken in advance. You can eat on it all week!
Baked chicken breast: place on baking sheet, coat in extra virgin olive oil and salt/pepper. Bake at 400 for 30 minutes, flipping once

1 cup chopped baked chicken breast
1 cup broccoli (prep some fresh in advance by boiling/blanching or heat some frozen)
1/2 cup organic black beans
6-7 organic cherry tomatoes, halved
1/4 cup @annieshomegrown Shitake and Sesame dressing
Sprinkle of Parmesan cheese

Mix together and enjoy!!! Stay happy and healthy!

Good Morning and Happy Tuesday!

Anyone else love the smell of fresh baked muffins in the morning?
We made some delicious breakfast muffins jam packed with our Berry Harvest Premium Spread. Our Berry Harvest Spread is a delicious blend of fresh strawberries, blueberries, blackberries & raspberries. Together, these berries create an explosion of berry flavor and is sure to become a family favorite. Available in a 16.5 oz Family Size jar.
Here's how to make them:

Dry Ingredients:
2 ½ Cup All Purpose Flour
½ Cup Granulated Sugar
1 Tablespoon Baking Powder
½ Teaspoon Salt
Wet Ingredients:
1 Cup Milk
1 Large Egg
½ Cup Butter Melted
1 Teaspoon Vanilla Extract
½ Cup Crofters Organic Berry Harvest Premium Spread

Directions:

Preheat oven to 400°F. Spray a muffin pan with non-stick cooking spray and then set aside.
In a large bowl combine the dry ingredients – flour, granulated sugar, baking powder and salt and stir with a wire whisk to combine ingredients. In a medium bowl, combine the wet ingredients – beat the melted butter and milk first and then mix in the egg and vanilla extract. Mix well until blended.
Add the milk mixture to the flour mixture and stir until just combined. Batter will be lumpy.
Fill the muffin pan 1/3 of the way up with the muffin batter then drop in a teaspoon or two of our Crofter’s Organic Berry Harvest Premium Spread. Top with remaining batter.
Place in the already preheated oven and bake for 20-25 minutes or until you can insert a toothpick and it comes out clean. Let stand for a few minutes until the muffins cool and then remove from the pan. Had my delts killed by @shannonb.fit , had a good day at work and watched the end of Wall-E so my day was great. Little preface onto why I watched Wall-E (not that theres anything wrong with that): I have not watched any movies🎞. Growing up, I was never a huge fan of movies (I always thought they were too short- I liked long TV series) and growing up in an immigrant family I never watched American classics because my parents didn’t even know about them😂. So now, I my moms best friend actually made a list of movies she thinks I should watch so I’m slowly working down the list. -

Day 2 of my mini whole30 reset!! Today’s breakfast was simple and super quick to make. I used leftover potatoes from last night, sliced them and then crisped them in olive oil for about 8 minutes, then just scrambled an egg for protein!

We need to have more public conversations about weight bias *period*, but one place where this form of stigma is particularly unacceptable is in the field of eating-disorder treatment and recovery. If ED-recovery providers can't recognize that fatphobia is one of the biggest driving forces behind the illnesses that come through our doors, then frankly we’re walking around with our heads in the clouds. Too many providers are offering "weight management" alongside eating-disorder recovery, not even acknowledging that these two concepts are at complete odds with one another.

I found these ~funky~ purple sweet potatoes at @momsorganicmarket this weekend and just kind of grabbed them without even thinking...anyone else grocery shop like this?? 🙄 Anyways, I always see these beautiful #stuffedsweetpotato photos on Instagram and decided to give it a shot 🤷🏼‍♀️ I roasted these bad boys for 45 minutes, stuffed them with homemade roasted garlic chili chickpeas, then combined @soomfoods tahini with a little bit of lemon juice for some #drizzle goals 🙌🏼😍😙👌🏼 salty, sweet, spicy, lemony, garlicky, happy.
