Having coeliacs disease from birth I missed out on so much growing up in terms of food - it just wasn't available. I'm one of six children and was the only one in the house requiring a gluten free diet. Back then gf pasta just didn't exist; cakes, pizza, Christmas and party food, they were things everyone else ate. Maybe that's why I absolutely love cooking - I have the power to create everything and anything I want. I love fishing and foraging, taking my two gorgeous Yorkies on walks and picking fruit off the trees as we pass, collecting mushrooms and wild flowers and bringing them home to make food that brings me alive. So this is what I made with yesterday's foraging - ricotta, mushroom and truffle mezzelune. Homemade pasta is so much tastier than store bought - especially gf! The great thing with this recipe is you can make it with buckwheat flour. I used a mixture of white flour and buckwheat flour with a little guar gum. Simply mix with eggs and olive oil, then roll out to whatever thickness you like. Mezzelune comes from Italian meaning half moons - they also look a little like miniature Cornish pasties 😂😂😂. Slowly sweat some mushrooms and garlic in olive oil and serve with lots of fresh basil from the garden and popurri peppercorns - delicious for lunch or dinner 😁 #pasta#italian#freshfood#mushrooms#vegetables#wild#greatoutdoors#foodandwine#food#foodporn 🤤😋😁
