Avocado Lime Shrimp 🥑 🦐

Servings: 2
Per serving: 1 Lean | 2 Greens | 2 Condiments | 2 Healthy Fats

INGREDIENTS:
14 ounces jumbo cooked shrimp, peeled, deveined and chopped
1 1/2 cup tomato, diced
4 1/2 ounces avocado, diced
1/4 cup jalapeno, seeds removed, diced fine
1/4 cup chopped green onion
2 tablespoons lime juice
1 tsp olive oil
1 tbsp chopped cilantro
1/8 teaspoon salt
¼ teaspoon fresh pepper to taste

DIRECTIONS:
In a small bowl combine green onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion.

In a large bowl combine chopped shrimp, avocado, tomato, and jalapeno. Combine all the ingredients together, add cilantro and gently toss. Adjust salt and pepper to taste.

Sorry not sorry, but my mac n cheese is the best (swipe for recipe)! Having some leftovers right now and the sauce is just as creamy as when I first made it. I get asked often how to store leftovers/reheat my sauce; to get my mac this creamy days after making it I always store my sauce separate from my pasta, with any type of sauce it will separate if you refrigerate it already combined w/ your pasta. So just add sauce to the portion of pasta you’re going to eat and save the rest separately. When you warm the leftover sauce, simply add some to a pan on low heat and thin it out with a splash of nondairy milk and whisk until you get your desired consistency! That’s all I did, threw some breadcrumbs on top also, so delicious! ✨

Little Leaf Farms is a sustainable greenhouse primarily growing baby greens and red leaf lettuce. Since they’re based out of Devens, MA, they only shop to retailers they can deliver within 24 hours to prevent gross wilted lettuce. The lettuce was so crisp and stayed in my fridge for much longer than other perishable produce (great for a single girl like me always cooking for 1)!

So how about this as Wednesday night dinner? It's a #turkey and zucchini #lasagna, so good and so easy to make!
Turkey is the healthiest meat you can eat, and the minced turkey breast for this has a reduced fat content. It's also a great source of #serotonin, which is great to #eat towards the end of the day, as it helps us to #relax and gain better sleep - nothing better to eat on #nationalrelaxationday 👌It also contributes towards feelings of #happiness and #wellbeing, as if eating this lasagna wasn't cause enough! 😜

It's another #recipe taken from the fab #cleanandsimpleeating by #ljclarkson
Ingredients:
1 tablespoon coconut oil
500g turkey breast mince
1 small onion
2 crushed cloves garlic
1 grated carrot
4 large tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
Half a teaspoon fennel seeds
Salt and pepper
3 zucchini sliced lengthways

White cheese sauce:
2 tablespoons coconut oil
2 tablespoons wholemeal spelt flour
1 cup almond milk
1 teaspoon paprika
1 and a half cups grated parmesan
Salt and pepper
Shaved parmesan to garnish ❤️Preheat oven to 180 degrees centigrade and grease an ovenproof dish with coconut oil
❤️Heat coconut oil in a saucepan, saute onion until soft, add turkey and stir until slightly brown and add the garlic and carrots and tomatoes,oregano and basil. Bring to the boil, and then simmer for 20 mins
❤️Make the cheese sauce by heating oil in saucepan and adding flour to stir for 30 secs. The add milk gradually until sauce thickens. Remove from heat and add cheese and paprika
❤️Place a third of the zucchini in the baking dish. spread half of the turkey mixture on the bottom and top with a third of the cheese sauce. Repeat 3 times and then top with shaved parmesan cheese. Bake for 40 mins until zucchini is tender and cheese is brown

You can eat it like I do as left overs in the days to come, or freeze and eat another time, yummy! 💞

I went on a 5K walk this afternoon with the pup and got back and had a nature valley protein bar and a coffee. I’ve had some alcohol this evening which has been great as I’ve been good at restricting myself whereas usually during the summer holidays, I would drink more than is necessary. I had some nachos with dips and we made a homemade veggie chilli which was super spicy! Too spicy for me! lately I’ve been all about breaking out of comfort zones and making dinner “live” was something I’ve seen on Instagram and thought “wow, that’s cool, I wish I had the guts to do that”. so today I just did it. 🙈 look, it’s pretty low-quality but I really enjoyed doing it and would love to do it again with a proper set up.

this meal is DELICIOUS and I promise you it’s just throwing a bunch of stuff in a casserole dish (but no one needs to know that if you want to impress your parents or a friend 😉)

Chicken breast with black beans and corn 🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽🌽
Ingredients:
4 chicken boneless skinless chicken breasts
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic salt
1/2 red onion
4 garlic cloves
1 bell pepper
3/4 cup frozen corn
1/2 can black beans, drained and rinsed
1/2 cup @tostitos salsa
Fresh cilantro or chives ———————————————
Directions:
1. Bring a frying pan to medium heat. Spray with non stick spray. Chop garlic and red onion. Add to the pan.
2. In a small bowl, whisk the salt, pepper and garlic salt. Sprinkle over chicken breast. Add chicken breast to the hot pan. Cook both sides until fully cooked or 180 degrees Fahrenheit. Once fully cooked, place chicken on a separate plate.
3. Add the corn, beans, chopped pepper, and salsa. Mix well. Let cool for about 5 minutes. Add chicken back in to the pan. Sprinkle it’s some extra salt and pepper. Enjoy!
Makes 4 servings.
Or this can be made for meal prepping for four days.
Depending on which salsa you use (medium, mild, hot, etc) this can be spicy. ———————————————

We celebrated the first day of school with snow cones for snack! I wanted to find a healthier option for the syrup since the store ones have a lot of dyes and hfcs, so I saw @100daysofrealfood made their own with 2 parts frozen juice concentrate to 1 part water. We found great frozen juice options with no added sugars or dyes!!! Today we tried the pineapple one and it was a success!!! Pittas filled with @toonsbridge halloumi, salsa verde, and roasted red pepper sauce for dinner this eve. The roasted red pepper sauce is so simple but packs a lot of flavour. Drain a jar of grilled peppers, retaining the oil. Blend the peppers with 2 tbsp of the reserved oil, 2 tbsp olive oil, half clove of garlic finely grated, 1 tsp smoked paprika, and 1 tbsp sherry vinegar. Serve with this, fish, grilled meats etc. A delicious, versatile sauce

E quando o tempo esfria, mas você não quer tirar a salada do cardápio semanal? Prepara um delicioso rosbife, compra um bom pão e joga tudo pra dentro dele, sanduba pronto em instantes.
O rosbife é uma receita bem versátil, que pode ser servida de diversas formas e temperaturas. 😋🍴♥️🌿🥗👩🏻‍🍳
Ingredientes:
🔸1 peça de filé mignon limpa (aproximadamente 1,4 kg);
🔸2 dentes de alho picados;
🔸2 colheres (sopa) de mostarda dijon em grãos;
🔸1 colher (sopa) de mostarda dijon (se não tiver, pode usar a comum);
🔸5 colheres (sopa) de molho inglês (80ml);
🔸Azeite, pimenta do reino e sal a gosto.
Modo de Preparo:
🔹Envolva todo o filé mignon com o alho, a mostarda, o molho inglês, a pimenta do reino e o sal;
🔹Coloque-o em um recipiente fechado e leve à geladeira por 1 hora, para marinar;
🔹Retire o filé da geladeira, coloque uma frigideira em fogo alto e regue-a com azeite;
🔹Quando a frigideira estiver bem quente, coloque o filé mignon para selar, utilizando um pegador para auxiliar;
🔹Reserve o caldo da marinada;
🔹Deixe fritar bem todos os lados, até que toda a peça esteja bem dourada;
🔹Desligue o fogo, retire o filé mignon e reserve até ele esfriar um pouco (pelo menos 20 minutos), corte em fatias finas;
🔹Arrume as fatias em um recipiente, jogue o caldo da marinada na frigideira usada para dourar a carne, misture bem e distribua por cima das fatias cortadas;
🔹Sirva quente, em temperatura ambiente ou frio, vai depender do seu gosto e de como você vai servir.
➡️Se quiser preparar antes e servir quente, leve ao forno preaquecido a 200 graus por 5 a 10 minutos.
Além de ser um excelente recheio para um sanduíche, o rosbife vai bem acompanhado de um risoto, um arroz à piamontese, uma massa, uma galette de batatas, uma salada, dentre tantas outras opções.
