Picked this perfect little pepper last week on our farm tour in Raleigh 👩🏻🌾 at @baileyfarms the pepper seeds are planted BY HAND. This was crazy to me considering they have acres and acres of peppers. It was amazing to see the production of a pepper and how it gets to the stores to the consumer to enjoy and prepare all different ways 🙌🏼 happy Tuesday!
Today’s lunch is leftovers from last nights dinner, just tupperware style 😉
First time making Trader Joe’s cauliflower gnocchi & imma fan 🙌🏻
SO easy to whip up for a quick dinner & also makes perfect leftovers!
All I did was cook them on medium heat (frozen) in a pan with olive oil...once they started to turn crispy I added the zucchini & a trader joe’s tomato & basil chicken sausage along with some pre-cooked broccoli...finished it off with adding some spinach & sprinkled with a little salt & pepper at the end!
Threw it in a bowl & there ya have a delicious, healthy dinner 😍
Definitely going to find some more recipes to make with the gnocchi but this was a good start if you ask me.
Also body is loving me bringing some veggies back in my life after a week with a lack of! 🥦🥗
