Soft-baked chocolate chip cookies (GF/Vegan)
Happy Treat Yo’ self Tuesday! This is the one chocolate chip recipe that doesn’t use fussy ingredients but still tastes like the real deal. These easy to make cookies are a favorite afternoon snack and often don’t last a day or two in our home.
1 cup whole grain oat flour (gluten-free)
1 cup super fine almond flour
½ tsp baking soda
¼ tsp salt
¼ cup softened vegan butter
¼ cup maple syrup
1 tsp pure vanilla extract
1/3 cup dark chocolate chips
1️⃣Preheat your oven to 350 degrees.
2️⃣Line your baking sheet with parchment paper or non-stick silicone mat
3️⃣Mix dry ingredients (oat and almond flour, baking soda and salt) in a medium bowl then add the wet ingredients. Combine thoroughly with mixer or by hand. Fold in the chocolate chips.
4️⃣Use melon baller or cookie scoop or well rounded tablespoon and place dough on lined baking sheet.
5️⃣Top with extra chocolate chips if desired.
6️⃣Bake for 10 minutes or until cookie has evenly browned. Let cookies cool completely before handling them so that they can harden a bit. Makes about 10-15 cookies.
8️⃣Enjoy cookies once fully cooled. They can store for up to 5 days in an airtight container.
To make homemade oat flour: Add 1 cup of gluten-free rolled oats into blender or food processor and blend for 60 seconds until fine flour forms.
