Lazy Hobo Hash.
For when you don’t want to do much but still want something yummy. @kaedeemarie came up with this and we love it. Vegan or not, potatoes make the world go round. Check out our highlights to view the step by step process. .
How to make:
-1 to 2 Tbs oil of choice (our preferred at the moment is algae oil)
-1 shallot, diced
-2 cloves roasted garlic or fresh garlic, minced
-2 large carrots diced
-3 celery stalks (chop the celery leaves and use those too!! Good flavor!)
-1 tsp salt, 1 tbsp pepper, 1 tbsp sprouts all purpose seasoning
-1/4 cup finely chopped parsley
-2 bags of tater tots (16 oz. bags) -2 cups of veggie broth; plus 1 cup water
optional: cheese (vegan or regular) and cholula hot sauce
1. In large skillet or wok, add oil of choice, we prefer algae, diced shallot, carrot, and celery. Sauté for 10 minutes or until tender, and add garlic.
2. Add tater tots, mix well. Add seasoning, broth, and cover. Let simmer on medium/low for 15 minutes, stirring occasionally and adding more broth if needed. Add parsley and serve with toppings of choice. .
