•GF Vegan Kidney bean curry•
One of my very favourite recipes from @thehappypear So delicious and so simple too... ticking all the right boxes, right?
1️⃣Put 3 tbsp oil in a pot, once hot add, a chopped onion, a chopped tomato
2️⃣Put the lid on and simmer for 5 minutes.
3️⃣Stir in 2cm fresh grated ginger crushed together with 3 cloves of garlic, put the lid back on and simmer for another 5-7minutes
4️⃣Add 1tsp turmeric and 1.5tbsp curry powder. Simmer for 3 minutes. Add a bit of water if it’s sticking.
5️⃣ Add 2 tins of drained kidney beans, 3 potatoes cut into wedges and 300ml hot water. Season with salt
6️⃣ bring to the boil then simmer for 30-40 mins.
7️⃣Finely chop a handful of fresh coriander and add at the end. ..
