The last couple of days haven't been as "on plan" as well, planned. A couple of bites of mac 'n cheese, basically an entire dessert of mini churros & ice cream, and if you watched my stories... popcorn {about 1/2 the tub 馃槼}, have all made their way into my belly.

And since I have some chips, guac, tacos & margs in my plans tonight, I'm making some healthier choices the rest of the day.

My dinner from last night was 馃憣馃徏馃憣馃徏 I could have this bowl of pasta everyday!! I used a new type of pasta for this that had 5 different types of greens in it (spinach, kale, parsley, zucchini, broccoli). These types of pasta are great because you can get your servings of vegetables in without even realizing it!! I included an image of the pasta box in the second picture 馃憠馃徏 1 cup super green rotini pasta
4 broccoli bites (cut up into smaller pieces as a substitute for meat balls)
Handful of sauteed spinach
Grilled red pepper & mushrooms

Topped with parmesan
Pasta sauce: RED PEPPER DIP (also displayed in the second picture) I love using this dip as pasta sauce because it has such a creamy texture to it that it goes together perfectly馃憣馃徏

Banana Bread Bakes Oats馃崒 & Lemon Blueberry Chia Jam馃崑

馃崒Baked Oats
3 mashed bannas
3/4 cup apple sauce
1/4 cup almond milk
3 tbs avocado oil
2 tbs apple cider vinegar
1 tsp vanilla .
- mix & add:
1/4 cup ground flax
1/4 cup hemp
3 tbs chia seeds
3 cups @bobsredmill oats (I did 1.5 quick + 1.5 steel cut)
3/4 cup oat or almond flour
1 tsp baking soda
1 tsp cinnamon
sea salt
- mix - pour & press into a 9x13 pan - bake at 375掳 for 20-25 min .

馃崑Blueberry Chia Jam
1.5 cups Blueberries
warm in microwave or saucepan on stove till warm - mash berries with fork & then add -
juice & zest from 1/2 a lemon
+ 3 tbs chia seeds - mix & set aside for 5 min. if need be add 1/2 tbs chia seeds at a time till desired consistency. .

Went to visit my friend in Eugene the other day and found this amazing little restaurant. Although they have a really small menu there food was amazing and it鈥檚 100% gluten free cafe. The cupcakes were lemon with a vanilla frosting. Also had a giant bowl of pumpkin squash stew, I was hesitant about this but it was so good. And they have homemade waffle cones, and some mint chocolate chip ice cream. This place is definitely one of the best places I鈥檝e ever eaten. I was feeling just this way so I made this #vegan #glutenfree @naturespathorganic Qia oatmeal (I absolutely love their oatmeal as it鈥檚 full of seeds like chia, pumpkin 馃巸 seeds) with fresh #organic bananas 馃崒, #seasonal nectarine 馃崙, a dollop of unsweetened @so_delicious coconut 馃ゥ yogurt for #guthealth . Then a sprinkle of Ceylon cinnamon for blood sugar regulation which also has a myriad of other health benefits which I did a swipe up with the full article on my #instastory 馃檶馃徎馃檶馃徎馃檶馃徎. 1 or 2 packages of Qia oatmeal
1 cup filtered water or unsweetened hemp or almond milk( I used water)
Pinch of sea salt
1/2 banana sliced
1/2 nectarine sliced
1 tbs Ceylon cinnamon
Take a small saucepan and add oatmeal , water and a pinch of sea salt. Bring t a quick boil then immediately recduce to low and cook another 3 minutes. Remove from heat then add to bowl with your favorite fruit, nut butters (optional). The options are endless and I explain on my blog!!
