For todays lunch I made myself a vegan pasta’n cheese variation along with sautéed vegetables and spinach. We actually got some last summer vibes the past few days so I decided to go for a more “in-between”-meal as the weather is trying to find its place. 🤷‍♀️ Not sorry about it ‘cause this vegan cheese sauce is absolutely amazing! 😍 Again a perfect example for how easy it is to create delicious plant based foods. 💕✨
Details (sauce for one serving of pasta):
1 small yellow potato (80g), 1 small carrot (50g), 1t cashew butter, 1t mustard and loooaaads of nutritional yeast. Cook up the potato and carrot and combine with rest of the ingredients. Then add salt to taste. (You may need to add a little bit of water for a better texture.)
