Annnnnnd taaaadaaaaah Sunday’s left over roasty potatoes become last nights Courgette & Pea Potato Patties and jheeeeeeze dems were 💣 🌱 . You know I like to keep it as simple as poss so here be the quick ting recipe (swipe left to see the journey from cold mashed up roast potato to PURRRFIK PATTIE) . . Mash up your left over roast potatoes and grate in 1 lrg courgette. Add in a heaped Tbsp if Garlic Powder, Dried Sage, Chilli Flakes & Paprika (these quantities will depend on how many pots you have but for the bowl I’ve used that’s a good amount) Add a dash of 🍋 juice & Soy along with a big pinch of S&P. . Stir in some defrosted petit pois peas and a bit of water to help it stick into shape (you can use a bit of flour or egg but I prefer not to) NOW THE FUN PART... get ya hands in that bowl and get squishin (be nice to the peas doe). Mould into patties, pop on a tray and leave in the fridge for 30 mins or so. . Once chilled, add to a heated pan of vegetable oil (enough for them to property fry). . Let them cook for around 5-8 mins on each side w/out turning (depending on how big you have made them) then FLIP! But be careful 🚫 Once crispy and brown on the outside place gently into kitchen roll to cool and serve w/ my super fresh n sexy Red Cabbage & Spring Green Veggie Salad (recipe share coming soon). . TBH. You can’t really go wrong with a crispy potato but these flavours work SERIARSLY well together and are a great quick whip up dinner for friends (gentle on the purse strings tooo). .
