Happy Friday! Need lunch or dinner ideas for this weekend? Here's another RECIPE: 𝗖𝗮𝗿𝗶𝗯𝗯𝗲𝗮𝗻 𝗠𝗮𝗻𝗴𝗼 𝗦𝗮𝗹𝗺𝗼𝗻 & 𝗢𝗹𝗱 𝗕𝗮𝘆 𝗦𝗵𝗿𝗶𝗺𝗽 𝘄𝗶𝘁𝗵 𝗮 𝗦𝗽𝗿𝗶𝗻𝗴 𝗦𝗮𝗹𝗮𝗱 𝗮𝗻𝗱 𝗦𝗼𝗳𝗿𝗶𝘁𝗼 𝗥𝗶𝗰𝗲. 🐟🥭🍤🥗🍚 Make sure to have a blast while cooking! 🎶 ENJOY. (Note: I share recipes in my IG stories often. Be sure to tune in next time if you missed this one!) . 𝗦𝗘𝗧 𝗧𝗛𝗘 𝗠𝗢𝗢𝗗 🎶 My playlist for this cooking session: (1) 𝙈𝙞𝙣𝙙’𝙨 𝙀𝙮𝙚 by Jordan Rakei (2) 𝙏𝙧𝙮 by Sidsel Endresen & Bugge Wesseltoft (3)𝙏𝙖𝙙𝙤𝙬 by Masego feat. FKJ (Favorite song right now) . 𝗔𝗣𝗣𝗘𝗧𝗜𝗭𝗘𝗥 𝗠𝘆 𝗦𝗽𝗿𝗶𝗻𝗴 𝗦𝗮𝗹𝗮𝗱 🥗 • Mix Baby Portabellas, Spinach Leaves, Tomatoes, Raspberries, Blueberries, Havarti Cheese, and Chopped Pecans • The combination of cheese, fruits, and pecans had enough flavor so I skipped adding any salad dressing to keep it healthy and clean! 𝗦𝗡𝗔𝗖𝗞 𝗧𝗜𝗠𝗘! • Quick chips & salsa snack for sustenance for the next step! 😋🙃 . ¡𝗗𝗔𝗡𝗭𝗔! • Take a break and dance!🕺🏻 . 𝗥𝗜𝗖𝗘 𝗖𝗼𝗼𝗸 𝗥𝗶𝗰𝗲: 🍚 • I prefer Jasmine rice cooked in a rice cooker • Add garlic clove (as always 🙃) • This time, I decided to add olive oil and Red Sofrito for added flavor! (I prefer homemade but was in a rush this time. Will share my favorite homemade sofrito recipe in my next cooking sesh so tune in!) . 𝗘𝗡𝗧𝗥𝗘́𝗘 𝗢𝗹𝗱 𝗕𝗮𝘆 𝗦𝗵𝗿𝗶𝗺𝗽 🍤 • Season shrimp with cayenne pepper and “Old Bay” seasoning • Sauté for about 3 minutes in coconut oil with minced garlic 𝗖𝗮𝗿𝗶𝗯𝗯𝗲𝗮𝗻 𝗠𝗮𝗻𝗴𝗼 𝗦𝗮𝗹𝗺𝗼𝗻 🥭🐟 • Season Salmon (salt, pepper, Mrs. Dash Garlic & Herb, cayenne pepper) • Cook to temp (I cook mine on medium/low heat for 8 mins) • Glaze Carribean Mango Marinade over salmon to liking 𝗕𝗢𝗡 𝗔𝗣𝗣𝗘́𝗧𝗜𝗧! Serve salmon and shrimp with cooked rice, sliced avocado, lime halves, salad, and cerveza. 🍽🍺 Cook time: 45 mins. Serves 2. In my case, #PartyOfOne. Bon appétit!
